Just had a delicious plate of mixed leaves with carrot, olives, baby plum toms, cucumber, red romano pepper and linseeds and with it two little slices of millet toast with butterbean pate which I made fresh.
I took a can of butterbeans (no salt, no sugar) and drained and rinsed them. I put them in the food processer with 2 cloves of garlic, quarter of a small red onion, about 6 large basil leaves, a gherkin, juice of half a lemon and some peel and a splash of extra virgin olive oil. I whizzed the whole lot up til it was creamy and everything was well blended. That's it! And it was deeelicious!
