Spinach Salad with Ginger Dressing
For the salad:
Baby spinach leaves, washed and dried
Beansprouts, rinsed
Spring onions, finely chopped
For the dressing:
1 large clove of garlic, put through a garlic press
A chunk of peeled root ginger, put through a garlic press
Finely chopped fresh coriander/cilantro
Sesame/olive oil blend
Dash of cider apple vinegar (or lime juice)
Simply place the leaves, sprouts and onions in a serving bowl, pour over the dressing and toss until evenly coated.
