Healthy Beans on Healthy Toast

For the toast...

I use Terence Stamp's "Stamp Collection" Organic and Wheatfree Bread which is made from organic barley, rye, rice, millet, maize, water, sea salt and yeast. Both Sainsbury and Waitrose stock the one with the green label which is topped with sunflower seeds.  The loaves are dinky so I toast three slices.

For the beans...

Gently heat a little olive oil in a non-stick pan and add half a finely chopped red onion.  Add a little dried Oregano, a sprinkling of sea salt and once it has gone transparent, add a can of organic chopped tomatoes. Add a generous chunk of cream of coconut and stir until melted. Then strain a can of Haricot beans in water (look for the type that have no sugar or salt added) and add the contents to the pan.  Stir everything together and continue to heat gently for about 5 minutes.  At this point, taste the bean mixture.  If you like your beans a bit more tangy, you can add a little tomato puree or a dash of cider vinegar.

Once you are happy with the flavour, drizzle a little olive oil over the toast and top with the bean mixture.
